Bible Reading Update

Well, I just wanted to check in with those that may have decided to take the challenge to read through the Bible in a year. How are you doing? Keeping up?

I have been loving it! I really thought it would be hard to find the time to read that many chapters, but it hasn't. I am actually ahead and have a hard time stopping when it's time to go to work. God's Word is so precious and I hope that you treasure it.

Friendship

Proverbs 27:17 - "Iron sharpens iron, and one man sharpens another."


This verse is true about many friends in my life. I was able to spend the weekend with one of them. I met Kari when I moved to IRBC. We have been roommates, partners in crime, but most of all - friends. True friendship is rare and a treasure. She truly sharpens me and points me to Christ.


Kari has been a missionary to Brazil for the last four years. She is now going to begin a new chapter in her life. She is marrying a Brazilian and will be a pastor's wife there. Our time together will be rare, but our friendship will last forever.


Thanks, Kari. I love you and can't wait to see what God has in store for you.


(Kari isn't used to the cold, Iowa winters anymore. She was wrapped in a sleeping bag, blanket, jacket and hat.)

Once Again, Another Mmmmm Good Recipe

My friend, Kari, is coming to visit this weekend. This means I get to cook!!!! She arrives today, so I have this yummy soup on the stove ready for her when she gets here. I know you guys will love it too.

This recipe is compliments of my friend, Mary.


Wild Rice Soup
1 T. Oil
1/2 c. shredded carrots
8 oz. cubed ham
1 6 oz. box long grain and wild rice mix (Uncle Ben's fast cook)
2 cans chicken broth (14.5 oz)
Onion flakes--a couple shakes
2 cans evap. milk
2 T corn starch
Sm. pkg. sliced almonds

Heat oil in kettle. Add carrots, ham, rice w/seasoning packet, onion flakes, and chicken broth. Bring to a boil. When rice is ready add evaporated milk (mix the corn starch in with a little of the evap. milk and add it too.) Add almonds. I usually add regular milk to this because I don't like it this thick. Enjoy.

Another Mmmm Good Recipe

I got this recipe from http://thepioneerwoman.com/ I made it last night and it was soooooo good that I knew I had to share it with you.



Scrumptious Apple Pie
1 pie crust

6 to 7 cups peeled and sliced Granny Smith apples
Juice of 1/2 lemon
1/2 cup sugar
4 tablespoons flour
1/4 teaspoon salt

1/2 cup flour
1 1/2 sticks butter
1 cup brown sugar
1/2 cup quick oats
1/4 teaspoon salt

1/2 cup pecans
1/2 jar (or more) caramel topping

Mix peeled apples, lemon juice, sugar, flour, and 1/4 teaspoon salt. Set aside. Cut the butter into the flour, then add in brown sugar, oats, and 1/4 teaspoon salt. Add apples to prepared pie shell and top with crumb topping. Cover crust edges with aluminum foil and bake in a 375-degree oven for 25 minutes. Remove foil from crust and place back into the oven for another 30 minutes. Chop pecans, and when five minutes remain, sprinkle them over the pie. Finish baking. Remove pie from oven and pour 1/2 jar (or more) of caramel topping over the top. Allow to cool slightly before serving.

Iowa Caucuses Tonight!

I'm sure many of you are sick of hearing about the Iowa Caucuses and are wondering what is so special about Iowa. Well, it's just simply that we are first.

If you live in Iowa, I encourage you to head to your caucus tonight at 7:00 (go early). If you aren't going to attend and plan to sit home and watch TV, I encourage you to participate. We live in a country that gives us the right to vote and have a voice. Use it! I can't even imagine living where I could not share my views. Praise the Lord for the freedom we have in the USA!!!

Take the Challenge

Our church is challenging us to read through the Bible in a year. I was hesitant to commit to it because I hate committing to something that I'm not sure I can complete. During the summer there will be days that I won't have time to read this much, but I have decided to accept the challenge. I can always read ahead.

I've read through the Bible, but never in its entirety in a year. We are using a program that breaks it up nicely, so you aren't just reading it straight through. We will read two chapters in Old Testament, a chapter in the Psalms and one in the New Testament.

So who wants to take the challenge with me?
